Healthy Hearty Vegetable Soup (for your turkey leftovers)

Ingredients for Healthy Hearty Vegetable Soup:


  • 1 ½ lbs. turkey leftovers

  • ¼ cup chopped onion

  • ¼ cup chopped celery

  • 1 clove garlic, minced

  • 1 medium bell pepper, chopped

  • 32 oz. reduced sodium chicken broth

  • 1, 14.5 oz can petite diced tomatoes

  • 1 cup chopped cabbage

  • 2 cups frozen cut green beans

  • 1 bay leaf

  • 1 tsp dried parsley flakes

  • ¼ tsp each: salt & pepper

  • ½ tsp each: dried thyme & basil Instructions


Lightly grease a large soup pot. Add onions, celery, bell pepper, and garlic, and cook until vegetables are crisp-tender. Stir in the remaining ingredients and bring mixture to boil. Reduce heat, cover, and simmer until vegetables are tender, about 30 minutes. Remove bay leaf before serving. Transfer to a small bowls and enjoy!


NOTE: You’re welcome to use any leftover vegetables you have in your fridge
