Lean and Green Chicken Crust Pizza Recipe

When I first started the nutrition program we coach for (before my wife and I became health coaches) I really didn’t know much about being creative with recipes. Because my wife Cindy was getting bored of just creating a dinner with protein and vegetables, she started looking for recipes that allowed for dinners to be a little more fun.

Eating pizza was one of those experiences I missed and when we first started exploring recipes related to pizza (healthy pizza) we found a cauliflower pizza recipe. It was good but I wouldn’t say it was our favorite. If that is something you are interested in I would recommend checking out the cauliflower recipe that can be found here.

Eventually Cindy (my wife) discovered the Chicken Crust Pizza which was program approved (for the program we health coach for) and looked delicious!

With a chicken crust pizza you get a closer resemblance to what a typical pizza would look like as it has a little thicker crust and you feel like you are getting more. When you finish it you should feel satisfied and full. The chicken crust pizza recipe is one of our family favorites and I think you will enjoy it as much as we do.

Here is the ingredients you will need for the chicken crust pizza recipe:

Serving Size: 2 servings

(Program Servings) 1 lean, 2 greens, 2 condiments

Total time to cook: About 30 minutes

  • ½ lb. of ground chicken breast

  • 1 egg

  • 2 Tbsp of grated parmesan cheese

  • ½ tsp of Italian seasoning

  • Cooking spray

  • ½ cup (no sugar added) tomato sauce (such as Rao’s Homemade sauce)

  • ½ cup reduced-fat shredded Mozzarella cheese

  • 2 tomatoes sliced (decent sized ones)

  • ¼ cup chopped basil

  • (You will need parchment paper as well)


  1. Preheat the oven to 400 degrees F

  2. Combine the first four ingredients on the list above into a medium bowl. After you mix it all together, form the mixture into a thin circular shape onto a parchment paper lined and lightly greased baking sheet.

  3. Back for about 20 minutes or until golden brown.

  4. Take out of the oven and then top it with the Rao’s sauce, Mozzarella cheese and tomato slices and then bake until the cheese is melted which should take about 7 to 10 minutes.

  5. Then take out of the oven and top with the fresh basil before serving.
